My work in the arts began with the opening of Le Laboratoire in Paris in the fall 2007. I had imagined Le Lab in a book I was writing at the time — ArtScience (Harvard Press 2008) — as a unique forum for creative thought in the sciences as well as in the arts. Three such centers opened up in Europe around this time, including in London, Dublin and Paris. We founders all wrote editorials in Nature on the phenomenon. From Le Laboratoire came original works of art and design, and innovations in food and sensory perception, leading to Cafe ArtScience.
